Recipe for vegan patty with sautéed onions and potatoes

Green version of a traditional dish.

We got the recipe from the book: “Plant-Based Family Meals – Easy Way to a Healthy and Greener Food Life“, written by Stina Dannerfjord and Isabel Christensen. They write the following about the recipe:

´”Another good classic if you crave some old Danish dishes. The minced patty can also easily be used as a Parisian steak for a lunch dish and is equally delicious on rye bread as a spread the next day.
Meat substitute products are a processed product and therefore not as healthy as naturally occurring plant proteins from, for example, beans and lentils. Therefore, we also recommend that you do not eat them daily but use them as a supplement to your green dishes once in a while.”

Prep Time: 5 minutes
Cook Time: 20 minutes

Equipment

  • Bowl
  • Cutting Board
  • Chef'S Knife
  • Frying Pan

Ingredients

"Hakkebøffer"

  • 1 package Vegetable Mince between 400-600 grams
  • Salt and Pepper
  • Onion Powder can be omitted
  • Fat oil or plant butter - for frying

Soft onions

  • Vegetable Butter
  • 2 pcs. Onion large
  • Salt and Pepper

Potato

  • 800 gram Potato

Instructions

  • Mix the plant-based mince with salt, pepper, and optionally a bit of onion powder. Knead well and form four evenly-sized patties. Optionally, score the patties with the back of a knife to create fine lines on the surface. Peel the onions and slice them. Melt the butter in a hot pan and add the onions. Sauté the onions over medium heat until they are very soft, at least 10 minutes. Stir the onions occasionally and season with salt and pepper. Remove the onions from the pan and place them in a small bowl. Add a bit of oil or butter to the pan again and turn up the heat. Fry the patties until they are nicely golden brown – about 3-5 minutes on each side. Season with salt and pepper before serving. Serve with boiled potatoes. If you want gravy, you can use the sauce from the meatloaf on page 127 in our book (Editorial note: or this vegan gravy).
