Potato salad is brilliant as a side dish to all sorts of meat and works especially well with spring and summer's grilled dishes. But it can also be eaten just as it is, as a meal in itself.

I really love potato salad! It can be made in SO many variations and tastes amazing!

When spring comes, the sun shines, and the days get warmer, when everything starts to bloom and many wonderful ingredients become available, I crave lighter, easy, and quick dishes. Here, potato salad is a really good option. It’s best when you can get new Danish potatoes for your salad, but I often jumpstart the season and use regular potatoes, which works just fine!

This potato salad is made with green pesto, sautéed beans, crispy bacon, and fresh tomatoes…. The pesto is my homemade wild garlic pesto (recipe here), but any other green pesto could be used, including store-bought…

No matter which pesto you choose, it adds lots of flavor, the bacon contributes a bit of salt and crunch, and the tomatoes complement with their fresh, slightly tangy taste…. Altogether, a pretty perfect mix of flavors and textures….

Potato salad with green pesto, bacon, and beans

Ingredients

  • 500 gram Potato new
  • 32 gram Green pesto
  • 1 package Bacon diced
  • 1 pcs. Shallots
  • 150 gram Beans green beans - both fresh and frozen work
  • 200 gram Cherry Tomatoes

Instructions

  • Scrub the potatoes well and boil them in lightly salted water until tender. Drain them and let them cool slightly.
  • Cut the potatoes into cubes and toss them in pesto.
  • Place bacon in a hot pan and cook for 3-4 minutes.
  • Meanwhile, chop the shallot and then add it to the pan. Cook until the bacon is crispy.
  • Add the beans and cook for another couple of minutes until the beans are tender.
  • Toss the bacon, onions, and beans with the potatoes.
  • Dice the cherry tomatoes and toss them with the potatoes as well.
  • Season with a little salt and pepper and serve with a good piece of meat or enjoy as it is.
