Potato salad with green pesto, bacon, and beans

Potato salad is brilliant as a side dish to all sorts of meat and works especially well with spring and summer's grilled dishes. But it can also be eaten just as it is, as a meal in itself.

Ingredients

  • 500 gram Potato new
  • 32 gram Green pesto
  • 1 package Bacon diced
  • 1 pcs. Shallots
  • 150 gram Beans green beans - both fresh and frozen work
  • 200 gram Cherry Tomatoes

Instructions

  • Scrub the potatoes well and boil them in lightly salted water until tender. Drain them and let them cool slightly.
  • Cut the potatoes into cubes and toss them in pesto.
  • Place bacon in a hot pan and cook for 3-4 minutes.
  • Meanwhile, chop the shallot and then add it to the pan. Cook until the bacon is crispy.
  • Add the beans and cook for another couple of minutes until the beans are tender.
  • Toss the bacon, onions, and beans with the potatoes.
  • Dice the cherry tomatoes and toss them with the potatoes as well.
  • Season with a little salt and pepper and serve with a good piece of meat or enjoy as it is.
