Okonomiyaki

Ingredients
Okonomiyaki
- 150 gram Wheat Flour
- 50 gram Panko breadcrumbs
- 300 gram stock vegetable or chicken
- 1 pcs. Shallots finely grated
- 12 gram Fresh ginger finely grated
- 2 cloves Garlic finely chopped
- 2 pcs. Egg
- 200 gram Pointed Cabbage finely chopped
- 1 pcs. Carrots large, finely grated
- Salt and Pepper from mill
- Olive Oil for frying
Accessories for topping
- 5 gram Sweet chili sauce
- 5 gram Sriracha
- 45 gram Mayonnaise
Okonomiyaki sauce
- 100 gram Ketchup
- 15 gram Soya
- 1/2 pcs. Lime juice only
- 21 gram Honey
- 15 gram Worcestershire Sauce
- 18 gram Oyster sauce
Instructions
Okonomiyaki
- Mix flour, PANKO and broth together into a thick batter and let it rest in a bowl for 15 minutes.
- Put oil in a pan and sauté onions, ginger, grated carrot, and garlic until golden and soft. Stir the cabbage together with everything in the pan and let it stand for about 1 minute. Season with salt and black pepper. Put the contents of the pan into the bowl with the batter and mix well together with two eggs until everything is well combined.
- Heat the pan well with a little oil. This portion makes two large pancakes. You can also make them small. You decide.
- Cook the pancake until it is golden and crispy on each side.
Mayonnaise
- Mix all the ingredients together.
Serving
- Place the okonomiyaki on a platter or plate, drizzle stripes of chili mayo and Okonomiyaki sauce, and sprinkle with sesame seeds, chili flakes, and spring onions.
- Serve a cabbage salad on the side or top with your favorite salad.
- Enjoy your meal
