  • Frying Pan

Ingredients

Okonomiyaki

  • 150 gram Wheat Flour
  • 50 gram Panko breadcrumbs
  • 300 gram stock vegetable or chicken
  • 1 pcs. Shallots finely grated
  • 12 gram Fresh ginger finely grated
  • 2 cloves Garlic finely chopped
  • 2 pcs. Egg
  • 200 gram Pointed Cabbage finely chopped
  • 1 pcs. Carrots large, finely grated
  • Salt and Pepper from mill
  • Olive Oil for frying

Accessories for topping

  • 5 gram Sweet chili sauce
  • 5 gram Sriracha
  • 45 gram Mayonnaise

Okonomiyaki sauce

  • 100 gram Ketchup
  • 15 gram Soya
  • 1/2 pcs. Lime juice only
  • 21 gram Honey
  • 15 gram Worcestershire Sauce
  • 18 gram Oyster sauce

Instructions

Okonomiyaki

  • Mix flour, PANKO and broth together into a thick batter and let it rest in a bowl for 15 minutes.
  • Put oil in a pan and sauté onions, ginger, grated carrot, and garlic until golden and soft. Stir the cabbage together with everything in the pan and let it stand for about 1 minute. Season with salt and black pepper. Put the contents of the pan into the bowl with the batter and mix well together with two eggs until everything is well combined.
  • Heat the pan well with a little oil. This portion makes two large pancakes. You can also make them small. You decide.
  • Cook the pancake until it is golden and crispy on each side.

Mayonnaise

  • Mix all the ingredients together.

Serving

  • Place the okonomiyaki on a platter or plate, drizzle stripes of chili mayo and Okonomiyaki sauce, and sprinkle with sesame seeds, chili flakes, and spring onions.
  • Serve a cabbage salad on the side or top with your favorite salad.
