Recipe for tzatziki with a twist
Try this delicious and relatively simple recipe as an appetizer/starter, or serve it as a side dish with whatever you normally serve tzatziki with.
Siphon tzatziki is a fun and innovative twist on the well-known and popular tzatziki.
This recipe belongs to the easy end of molecular gastronomy. It consists exclusively of familiar ingredients, and the only special equipment it requires is a siphon bottle.

Ingredients
- 250 gram Cucumber equivalent to about 1 cucumber
- 250 gram Yogurt plain
- 5 pcs. Gelatin Sheets
- 1 clove Garlic
- 20 gram Dill
- 4 gram Salt
- Pepper freshly ground
Instructions
- Soak the gelatin sheets in cold water, preferably for about 30 minutes.
- Rinse the cucumber, peel it, and cut it into smaller pieces.
- Peel the garlic and chop it roughly.
- Rinse the dill thoroughly and remove the stems.
- Put yogurt, dill, garlic, as well as salt and pepper in a blender.
- Blend everything well until it is smooth.
- Put the mixture in a sieve and strain it.
- Put 1 dl of the cucumber mixture in a bowl that can withstand a water bath.
- Heat the mixture gently until it is well warmed.
- Add the soaked gelatin to the yogurt mixture and let it dissolve. It is important that there are no lumps of undissolved gelatin in the liquid.
- Let the gelatin mixture cool and add the remaining cucumber mixture.
- Put the mixture in a siphon (use 1 gas cartridge) and shake the siphon vigorously.
- Refrigerate the siphon for 4 hours.
