Tzatziki with a Twist

Ingredients

  • 250 gram Cucumber equivalent to about 1 cucumber
  • 250 gram Yogurt plain
  • 5 pcs. Gelatin Sheets
  • 1 clove Garlic
  • 20 gram Dill
  • 4 gram Salt
  • Pepper freshly ground

Instructions

  • Soak the gelatin sheets in cold water, preferably for about 30 minutes.
  • Rinse the cucumber, peel it, and cut it into smaller pieces.
  • Peel the garlic and chop it roughly.
  • Rinse the dill thoroughly and remove the stems.
  • Put yogurt, dill, garlic, as well as salt and pepper in a blender.
  • Blend everything well until it is smooth.
  • Put the mixture in a sieve and strain it.
  • Put 1 dl of the cucumber mixture in a bowl that can withstand a water bath.
  • Heat the mixture gently until it is well warmed.
  • Add the soaked gelatin to the yogurt mixture and let it dissolve. It is important that there are no lumps of undissolved gelatin in the liquid.
  • Let the gelatin mixture cool and add the remaining cucumber mixture.
  • Put the mixture in a siphon (use 1 gas cartridge) and shake the siphon vigorously.
  • Refrigerate the siphon for 4 hours.
