
Recipe for strawberry cold buttermilk soup with homemade kammerjunkere
Homemade “koldskål” is always a good idea, and the classic version tastes absolutely fantastic. But have you ever made “koldskål” with strawberries…? It can really bring something special! Both sweet and refreshing, with a mild strawberry flavor. It tastes delightful as it is, and even better with homemade “kammerjunkere”!
It’s not difficult at all to make “kammerjunkere”; in fact, they can be made in just half an hour, and they are simply different from the ones you buy. The “kammerjunkere” in this recipe are with vanilla and a hint of citrus, which perfectly complements the mild strawberry flavor.

Danish Strawberry Koldskaal with homemade kammerjunkere
Ingredients
Kammerjunker - Danish biscuits
- 100 gram Wheat Flour
- 25 gram Graham Flour
- 1 tsp. Baking Soda
- 50 gram Cane Sugar
- 50 gram Butter room temperature
- 1 tablespoon Vanilla Sugar
- 1 pcs. Egg
- 1/2 tablespoon Lemon Zest grated - or a bit of lemon juice
Danish Strawberry Koldskaal
- 2 pcs. Egg
- 2 tablespoon Sugar
- 1 tsp. Vanilla Sugar
- 150 gram Strawberry fresh or frozen
- 1/2 tablespoon Lime Juice
- 6 dl Buttermilk
- 2 dl Soured Milk or ymer
Instructions
Kammerjunkere
- Start with the kammerjunkere, as they need the most time.
- Mix flour, baking powder, sugar, lemon zest, and vanilla sugar well together.
- Add butter and mix with a hand mixer until the butter is completely crumbled. Bring the dough together by mixing in the eggs.
- Roll small balls, press them slightly flat, and place on a baking tray with baking paper.
- Bake at 150 degrees Celsius (302 degrees Fahrenheit) for 20 minutes.
Strawberry cold buttermilk soup
- Whisk eggs, sugar, and vanilla sugar until airy.
- Blend the strawberries and mix in along with lime, buttermilk, and thick milk. It's ready!
- Serve the cold buttermilk soup with kammerjunkere and optionally a few fresh berries on top
