Recipe for puff pastries

Cream puffs taste fantastic, but they can be a bit tricky. They are delightful and airy when they succeed, but really frustrating and dull when they don’t.

For cream puffs to be considered successful, they must not collapse in the oven but stand tall and full, holding their shape.

Cream puffs are a mixture of water/milk, butter, and wheat flour, which are baked and thickened with eggs. They are actually easy to make if you just know what to do – and what not to do.

Once you have mastered it, there’s no limit to the delicious pastries you can create! You can, for example, make pastry dolls or Shrovetide buns.

Ingredients

  • 100 gram Wheat Flour
  • 80 gram Butter
  • 3 pcs. Egg
  • 100 gram Water
  • 103 gram Whole Milk

Instructions

  • Start by preheating the oven to 200 degrees Celsius (392 degrees Fahrenheit) (fan). The most important thing when making puff pastries is that your oven works/warms evenly and that you use a hand mixer/stand mixer - so you can be sure the eggs are whipped properly.
  • First, boil the milk and water together with the butter. When it boils, add the flour, and stir it together quickly. Lower the heat and let the flour cook for 5 minutes while you stir, so it bakes through.
  • Let the dough cool a bit. If the dough is too hot when the eggs are whipped in, the eggs and dough won't combine.
  • When the dough has cooled a bit, whisk the eggs in one at a time. Use a hand mixer if necessary.
  • Once all the eggs are whipped in and the dough has come together, put it in a piping bag with a star nozzle.
  • Pipe the dough onto a baking sheet lined with parchment paper. You can pipe it into any shapes you want.
  • Bake the puff pastries in the middle of the preheated oven for 15-20 minutes. Do not open the oven for the first 15 minutes, as the puff pastries will collapse.
  • Take the puff pastries out of the oven when they are lightly golden.
  • Let them cool on a rack afterward.
  • Decorate with icing or sprinkle powdered sugar on top.
