Puff Pastries

Puff pastries taste fantastic, but they can be a bit tricky. They are lovely and airy when they succeed, but really troublesome and dull when they don't.

Ingredients

  • 100 gram Wheat Flour
  • 80 gram Butter
  • 3 pcs. Egg
  • 100 gram Water
  • 103 gram Whole Milk

Instructions

  • Start by preheating the oven to 200 degrees Celsius (392 degrees Fahrenheit) (fan). The most important thing when making puff pastries is that your oven works/warms evenly and that you use a hand mixer/stand mixer - so you can be sure the eggs are whipped properly.
  • First, boil the milk and water together with the butter. When it boils, add the flour, and stir it together quickly. Lower the heat and let the flour cook for 5 minutes while you stir, so it bakes through.
  • Let the dough cool a bit. If the dough is too hot when the eggs are whipped in, the eggs and dough won't combine.
  • When the dough has cooled a bit, whisk the eggs in one at a time. Use a hand mixer if necessary.
  • Once all the eggs are whipped in and the dough has come together, put it in a piping bag with a star nozzle.
  • Pipe the dough onto a baking sheet lined with parchment paper. You can pipe it into any shapes you want.
  • Bake the puff pastries in the middle of the preheated oven for 15-20 minutes. Do not open the oven for the first 15 minutes, as the puff pastries will collapse.
  • Take the puff pastries out of the oven when they are lightly golden.
  • Let them cool on a rack afterward.
  • Decorate with icing or sprinkle powdered sugar on top.
