Here we have a delicious and easy potato salad. This version is a cold potato salad and a lovely side dish for a barbecue evening.
Ingredients
- 1 kg Potato Small if possible
- 12 gram Sour Cream
- 42 gram Mayonnaise Homemade, store-bought, Hellmann's, or Miracle Whip
- Spices Salt and pepper
- 5 gram Lemon Juice
- 4 gram Curry
- Herbs Chopped parsley
Instructions
- Make sure the potatoes are of similar sizes. Boil the potatoes in salted water until they are tender. This usually takes 15-20 minutes.
- Drain the water and let the potatoes cool off. The quickest way to cool them is in a dish where they are not stacked on top of each other and in the fridge/freezer.
- Mix the potatoes with the dressing and allow them to sit for at least 15 minutes before serving.
- The potato salad goes well with most grilled meats.
