Recipe for homemade pina colada
Luxury version of the classic PIÑA COLADA, known as the official drink of Puerto Rico.
We have the recipe from the book: “Iconic Cocktails“, written by Jesper Schmidt. He writes the following about it:
“Directly translated, Piña Colada means ‘strained pineapple’, referring to the freshly pressed pineapple juice that should ideally be used. But if you don’t have that on hand, it will still be a fantastic cocktail with store-bought juice. Piña Colada was invented in 1952 in Puerto Rico by Ramón Monchito Marrero, who was a bartender at the Caribe Hilton Hotel, and it also exudes Caribbean flavors like coconut, pineapple, lime, and rum. Lime juice is crucial in the recipe; otherwise, the Piña Colada risks becoming too sweet. This version is blended with a couple of scoops of coconut sorbet, which provides a soft and refreshing sensation, perfect for a hot day.”

Ingredients
- 6 cl Rome Plantation Isle of Fiji Rum
- Coconut Sorbet 3 scoops
- 8 cl Pineapple Juice
- 2 cl Lime Juice fresh – e.g. from Ingredi
- 2 cg Liquor Giffard Caribbean Pineapple Liqueur
- Pineapple Leaves
Instructions
- Put all ingredients in a blender and blend until smooth and creamy.Pour the cocktail into a glass and garnish with pineapple leaves or some fresh pineapple.
