Lemon foam is easy to make and adds a fresh and unique twist to dishes like fish.

Use freshly squeezed lemon juice; it tastes 100 times better than the bottled products you can buy.

Ingredients

  • 150 ml Water
  • 150 ml Lemon Juice Preferably freshly squeezed
  • 2 gram Soy Lecithin

Instructions

  • Pour lemon juice, water and soy lecithin into a bowl.
  • Blend with an immersion blender or whisk in the liquid until you have a good amount of foam.
  • Scoop the foam off the surface with a spoon and transfer it to another bowl.
  • Repeat step 2 for a larger amount of foam.
  • Let the foam sit for 1-2 minutes to remain stable.
  • For example, serve the lemon foam with oysters.
