
Recipe for lemon foam
If you want to jazz up the Christmas lunch a bit, for example, the fish fillet or fresh oysters can be complemented with a touch of lemon foam.
Lemon foam is easy to make and adds a fresh and unique twist to dishes like fish.
Use freshly squeezed lemon juice; it tastes 100 times better than the bottled products you can buy.

Lemon Foam
Ingredients
- 150 ml Water
- 150 ml Lemon Juice Preferably freshly squeezed
- 2 gram Soy Lecithin
Instructions
- Pour lemon juice, water and soy lecithin into a bowl.
- Blend with an immersion blender or whisk in the liquid until you have a good amount of foam.
- Scoop the foam off the surface with a spoon and transfer it to another bowl.
- Repeat step 2 for a larger amount of foam.
- Let the foam sit for 1-2 minutes to remain stable.
- For example, serve the lemon foam with oysters.
