Lemon Foam
Want to spruce up the Christmas lunch a bit? For example, the fish fillet or fresh oysters can be pampered with a bit of lemon foam. Lemon foam is easy to make and gives a fresh and different touch to, for example, fish dishes.

Preferably freshly squeezed

Soy Lecithin
Instructions
Pour lemon juice, water and soy lecithin into a bowl.
Blend with an immersion blender or whisk in the liquid until you have a good amount of foam.
Scoop the foam off the surface with a spoon and transfer it to another bowl.
Repeat step 2 for a larger amount of foam.
Let the foam sit for 1-2 minutes to remain stable.
For example, serve the lemon foam with oysters.
