Delicious and delightful French carrot cake without gluten.

It is easy to make your own, and you just use the gluten-free flour that you think makes sense for the recipe.

It requires a 22 cm springform pan.

Gluten-free Carrot Cake

Ingredients

  • 2 pcs. Egg
  • 125 gram Cane Sugar or coconut sugar
  • 91 gram Olive Oil
  • 100 gram Sourdough
  • 125 gram Flour gluten-free flour. For example, rice or buckwheat flour or a mix of several kinds
  • 5 gram Baking Soda
  • 2.6 gram Cinnamon ground
  • 3 gram Sea Salt
  • 4 gram Vanilla Sugar or vanilla powder
  • 75 gram Hazelnuts chopped
  • 50 gram Coconut Flour
  • 200 gram Carrots grated
  • 100 gram Apples finely grated or applesauce
  • 1 handful Raisins can be omitted
  • Powdered Sugar for decoration

Instructions

  • Whisk eggs, sugar, oil, and sourdough together in the mixing bowl.
  • Mix flour and spices together and then add it to the bowl with the wet ingredients.
  • Mix everything well in the mixer and finally add nuts, coconut, carrots, and apple.
  • Fold it together until just combined.
  • Preheat the oven to 175 degrees Celsius (347 degrees Fahrenheit) (convection).
  • Pour the batter into a springform lined with parchment paper and bake the cake
  • in the preheated oven for about 45 minutes.
  • Check with a knitting needle to see if it passes the test and comes out dry.
  • Take the cake out of the oven and let it cool in the form.
  • Finally, dust with sifted powdered sugar.
