
Recipe for finskbrød
A classic cookie that is popular during Christmas, most people know it as something their grandmothers have baked.
We have the recipe from the book “Cookies“, where the author Louisa Lorang writes the following about the recipe:
“It’s an art to get as much sugar and as many chopped almonds as possible to stick to the Finnish bread, but with 50 pieces, you’ll learn it along the way. That’s because the best ones have a lot of crunch.”

Finskbrød
Equipment
- Food Processor
- Cutting Board
- Chef'S Knife
- Baking Tray
- Baking Paper
- Oven
- Bowl
- Whisk
- Brush
Ingredients
- 200 gram Butter
- 250 gram Wheat Flour
- 50 gram Sugar
- 1 pinch Salt
Topping
- 1 pcs. Egg
- 15 gram Water cold
- 50 gram Almonds chopped
- 50 gram Pearl Sugar
Instructions
- Cut the butter into cubes, and mix it with flour, sugar, and salt until the dough comes together.
- You can do it by hand or put everything in a food processor and let it do the work for you.
- Wrap the dough in plastic wrap, and place it in the refrigerator for 30 minutes.
- Take the dough out and roll it into finger-thick sausages, cut them into 3-4 cm long pieces, or shape them into small, rustic pieces.
- Place the pieces on baking sheets lined with parchment paper.
- Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
Topping
- Whisk the egg and water together, and brush the cookies with the egg wash.
- Mix almonds and pearl sugar, and sprinkle it on the cookies.
- Bake the cookies in the oven for 8-10 minutes, and let them cool on a rack.
