For me, the perfect dream cake is a perfect match between cake and topping – and it can almost be half and half! (Almost, that is)

What is the perfect dream cake for you?

My guess is a moist base and a delicious and creamy topping!! Yuuuumm.

Equipment

  • 1 Roasting Pan in 33x23 cm

Ingredients

Dough

  • 250 gram Sugar
  • 275 gram Flour
  • 10 gram Baking Soda
  • 5 gram Vanilla Paste or vanilla sugar
  • 4 pcs. Egg
  • 80 gram Butter
  • 200 gram Milk
  • 1 pinch Salt

Toppings:

  • 150 gram Butter
  • 225 gram Coconut Flour
  • 275 gram Brown sugar
  • 100 gram Milk

Instructions

Dough:

  • Whisk eggs, sugar, and vanilla well together for a couple of minutes until a thick eggnog.
  • Mix flour, baking powder, and salt.
  • Melt the butter and add milk to cool the mixture.
  • Now mix alternately sifted flour mixture and milk/butter into the eggnog and fold gently.
  • Pour into a baking tray lined with parchment paper and bake at 175 degrees Celsius (347 degrees Fahrenheit) (fan) for about 20-25 minutes.
  • It should not be fully baked.

Topping:

  • Melt butter, milk, and brown sugar in a pot until the sugar is dissolved.
  • Briefly blend the desiccated coconut in a mini chopper or similar.
  • Add the coconut to the butter and stir.
  • Bring the filling to a boil.
  • Take the cake out and spread the filling on the cake.
  • Bake the cake for a further 5-10 minutes, until the filling starts to bubble.
  • Let the cake cool before serving.
  • Enjoy it very much!
