Recipe for homemade chocolate muffins

Chocolate cake must be almost the most common dessert! Therefore, it also needs to be absolutely perfect.

Just as they say you can judge a restaurant by its simplest dishes, I also think you can dare to claim that you can judge a person’s baking skills by a plain chocolate cake.

It might sound a bit harsh, but it’s just a hypothesis! ?

Chocolate Muffins

When I recently had an overwhelming craving for chocolate cake, but didn’t just want to settle for whipping up a sheet cake, I decided it had to be chocolate muffins!

They were baked slightly less than most might do, but that simply made them MUCH more delicious and more chewy. I think some chocolate cakes can easily become a bit dry and boring if they are fully baked through.

A good and rich chocolate flavor is greatly enhanced by not being TOO stingy with the salt, and the salt should preferably be of a certain quality – that’s something I care a lot about.

Chocolate Muffins

You can EASILY choose to serve the finished chocolate muffins just as they are, but you can also decorate them with a good homemade raspberry mousse (as I did) – or try spreading a creamy dulce de leche over them! At least, I think I’ll try that next time.

Homemade Chocolate Muffins

Ingredients

  • 165 gram Chopped chocolate or 150 grams
  • 1 package Butter 250 grams
  • 220 gram Sugar
  • 2 gram Salt I used sea salt
  • 4 Egg
  • 50 gram Cocoa powder roughly
  • 125 gram Wheat Flour

Instructions

    1. Put chocolate and butter in a saucepan.
    2. Melt it on the stovetop into a uniform mixture.
    3. Remove the saucepan from the heat and let it cool.
    4. Preheat the oven to 170 degrees Celsius (338 degrees Fahrenheit) (conventional top/bottom heat).
    5. Meanwhile, whisk sugar and eggs into a light and fluffy batter.
    6. Add salt.
    7. Sift flour and cocoa powder into the egg mixture.
    8. Gently fold the now cooled chocolate mixture into the egg mixture.
    9. Place the molds on a baking rack.
    10. Pour the batter into the molds. Fill the molds about 3/4 full, so your muffins have room to rise a bit.
    11. Place the rack in the middle of the oven.
    12. Let your muffins bake for 25-30 minutes.
    13. Remove the finished muffins from the oven and let them cool on the rack.
    14. Serve the delicious chocolate muffins as they are, or decorate them as desired.
