  • Cutting Board

Ingredients

  • 500 gram Wheat Flour
  • 18 gram Salt
  • 100 gram Water
  • 6 pcs. Egg optional 1 extra egg
  • 4 l Water for boiling
  • 36 gram Salt for boiling water
  • Butter for frying

Instructions

  • Mix all-purpose flour and salt in a large bowl.
  • Add water and eggs, and mix the dough. The amount of eggs depends on the humidity and similar factors, so start with 4 and add more as needed to achieve a thick and smooth consistency.
  • Bring a large pot of water with salt to a boil.
  • You now need to "shape" your spätzle from the dough, which can be done in the following two ways:1. Press the dough through a spätzle press (a press shaped like a very large garlic press). Hold the press over the pot of boiling water while pressing the dough through and into the water.2. Spread the spätzle dough thinly on a cutting board. Hold the cutting board at an angle over the pot of boiling water and cut the dough into strips that drop into the water as you cut.
  • Your spätzle are done cooking when they rise to the surface.
  • Place the cooked spätzle in a warmed dish.
  • Spätzle can be eaten as they are, or they can be fried in butter, which makes them delicious and crispy.
  • Heat a pan with plenty of butter.
  • Fry your spätzle until they become slightly crispy and have a light golden surface.
  • Serve with stews.

Notes

If you have leftover spätzle, it's perfect to fry them in butter and serve them either with leftover stew or a new dish.
They taste delicious when fried in butter, and you avoid food waste!
