
Recipe for lentil soup
Delicious and Healthy Lentil Soup.
It’s January now, and it’s time to put away the holiday and New Year’s lifestyle.
However, eating healthier doesn’t have to be boring; you can still prepare delicious and flavorful dishes.
Today we had this lentil soup, and it was simply delicious.
My partner, who usually doesn’t eat this kind of dish, loved it.
So, if you, like me, think that January should offer something a bit healthier than December, this flavorful soup is highly recommended.
Moreover, soup is just genius in this weather, which has brought a bit of frost today—it provides that extra warmth.
And as a bonus, the recipe is vegetarian.

Lentil Soup
Equipment
- Cutting Board
- Chef'S Knife
- Pot
Ingredients
- 2 pcs. Onion
- 2 cloves Garlic
- 5.3 gram Ground ginger
- 13.5 gram Olive Oil for frying
- 9 gram Cumin ground
- 0.5 gram Cilantro ground
- 1 pcs. Chili fresh - up to 2 pieces to taste
- 400 gram Lentils red and dried
- 2 cans Chopped Tomatoes
- 1 can Coconut Milk
- 1.5 l Vegetable Broth
- 1 pcs. Lime
- Salt and Pepper from the grinder
Topping
- 30 gram coconut flakes toasted
- 1 handful Cilantro fresh
Instructions
- Chop the onions and sauté in a bit of oil.
- Add the spices and fry them along with the onions.
- Add the lentils and the remaining ingredients.
- Let it simmer for 30 minutes, stirring occasionally, until the lentils are tender.
- Season the soup with lime juice, salt, and pepper to taste.
- Serve the soup with toasted coconut flakes and fresh coriander.
