With its perfect combination of sweetness and acidity, this red cabbage is really worth trying.

The cabbage is tender but still has a slight crunch, making it much more flavorful than the softer, overcooked versions you can buy in jars.

Homemade Red Cabbage

Ingredients

  • 250 gram Red Cabbage
  • 15 gram Butter
  • 30 gram Vinegar
  • 30 gram Water
  • 8.4 gram Sugar
  • Spices salt and pepper

Instructions

  • Finely slice the red cabbage.
  • Heat a pot and melt the butter.
  • Sauté the cabbage in the butter.
  • When the cabbage has softened a bit, add the vinegar. 
  • Boil the red cabbage over high heat for a few minutes without the lid.
  • Add water and salt and put the lid on the pot.
  • Let the cabbage simmer for about 1 hour.
  • Season with sugar, pepper, and possibly more salt.

Notes

If you have duck fat on hand, you can use it for sautéing the cabbage instead of butter.
