Recipe for oven-roasted potatoes with duck fat

Potatoes are possibly one of the ingredients we consume in the most different varieties: Boiled, sous vide-prepared, hasselback, rösti, french fries, pommes pailles, oven-roasted, in potato salad, as crispy potato chips… and the list goes on!

Everyone loves crispy potatoes, and if you roast them in duck fat, they become even crispier than when they are simply roasted in oil. In general, duck fat is just great for making things crispy. Additionally, it gives a really delicious flavor to the oven-roasted potatoes. Duck fat can really do something special!

These oven-roasted potatoes with duck fat are super crispy and delicious, and of course, you can also replace the duck fat with oil.

Oven-Roasted Potatoes with Duck Fat

Ingredients

  • 1 kg Potato
  • 15 gram Vinegar
  • 28 gram Duck Fat or neutral tasting oil
  • Salt and Pepper

Instructions

    1. Peel the potatoes.
    2. Cut the potatoes into uniform pieces.
    3. Boil them for 7 minutes in water with a bit of vinegar.
    4. Remove the potatoes from the water and drain them through a sieve to get rid of all the water.
    5. Place them on a clean towel and let them steam off a bit.
    6. Melt the duck fat in the pot and add salt and pepper. 
    7. Return the potatoes to the pot and toss them well to coat them in the fat.
    8. Transfer them to a baking dish in a single layer and place the dish in a preheated oven at 200°C (fan). They can also be made on a baking sheet lined with parchment paper.
    9. Toss the potatoes after 30 minutes.
    10. After about 60 minutes of total baking time, they are ready - crispy and delicious!
