
Recipe for mayo with dill and whipped cream
Delicious homemade dill mayonnaise, made more airy with the help of whipped cream.
It pairs excellently with seafood and fish dishes.
For New Year’s Eve, my wife prepared a delightful dish with oven-roasted langoustines.
My contribution to the dish is this lovely mayo and a light and flavorful Manitoba bread.

Mayo with Dill and Whipped Cream
Equipment
- Bowl
- Whisk
- Cutting Board
- Knife
Ingredients
- 1 pcs. Egg Yolk
- 5 gram Dijon Mustard
- 1.5 gram Salt
- 1 clove Garlic
- 0.5 pcs. Lemon zest and juice
- 184 gram Rapeseed Oil or another neutral oil
- 60 gram Whipped Cream approximately, can be 3 tbsp., depending on consistency
- Salt to taste
Instructions
- Whisk egg yolks with mustard, vinegar, and salt.
- Add the oil gradually while whisking until the oil is incorporated and the desired consistency is achieved.
- Whisk the cream into whipped cream and gently fold it into the mayonnaise.
- Add crushed garlic, lemon juice/zest, and chopped dill.
- Season to taste with additional salt and possibly more lemon juice.
