Recipe for colorful winter salad with cabbage, beetroot, fruit, and berries
Another take on a delightful winter salad featuring some of the season’s best ingredients. This one includes cabbage, beets, grapefruit, and pistachios.
In this salad, you dive into a fireworks display of beautiful colors, sweet vegetables, tangy berries, and crunchy fresh salad. Each bite offers something new and exciting, and together it all comes together in perfect harmony.
On the plate is a mixed green salad with spinach and crisp lettuce, some purple pointed cabbage, red and yellow beets, raspberries, grapes, and grapefruit. On top are crunchy pistachios, and to bring it all together, there is a simple lime dressing that’s both slightly tangy and sweet – it’s a delightful mix!
The salad is both tasty and beautiful to look at – it will brighten up any Christmas or New Year’s table.
The best part? It’s ready in 15 minutes!
Tip: Beets in different colors are available at Rema1000 in bulk for almost nothing, and the great thing is that you can buy just the amount you need and avoid food waste. But can you even use raw beets in a salad, you might wonder? The answer is yes! They just need to be sliced very thinly, and they taste wonderful in a salad; crispy and sweet and delightful combined with the tangy and more bitter elements.
