Colorful Winter Salad with Cabbage, Beetroot, Fruit, and Berries

On the plate is a mixed green salad with, among other things, spinach and crisp lettuce, some purple pointed cabbage, red and yellow beetroot, raspberries, grapes, and grapefruit. On top are crunchy pistachios, and to bring it all together there's a simple, at once slightly tangy and sweet lime dressing – yum, it's such a delightful mix!

Ingredients

  • 1 bag Salad mixed, e.g., spinach, arugula, and/or crisp lettuce - or whatever you prefer
  • 50 gram Pointed Cabbage purple
  • 1 pcs. Beetroot yellow
  • 1 pcs. Beet Roots
  • 1 pcs. Grapes
  • 150 gram Grapes red
  • 100 gram Raspberry
  • 2 handfuls Pistachios salted pistachios without shells, chopped

Lime dressing

  • 50 gram Lime Juice
  • 27 gram Olive Oil
  • 14 gram Honey liquid
  • Salt a little

Instructions

  • Mix the dressing together.
  • Thinly slice the pointed cabbage.
  • Toss half of the dressing with the salad and pointed cabbage – arrange on a plate or platter.
  • Peel and slice the beetroot into very thin slices (either with a mandoline or a sharp knife).
  • Peel the grapefruit and cut into segments or cubes.
  • Halve the grapes.
  • Arrange the beetroot, grapefruit, and grapes on top of the salad, drizzle with the remaining dressing and top with chopped pistachios – serve.
