
Recipe for zucchini patties with cottage cheese and parmesan
Super delicious, vegetarian zucchini fritters with Parmesan and cottage cheese – easy to make, crispy on the outside, moist on the inside, and packed with flavor from cheese, garlic, and spices – yum!
The fritters taste great with a good salad, perhaps some bread, and maybe even a good dip.
The zucchini in the fritters can easily be replaced with another vegetable, such as grated carrots or grated eggplant – just use whatever vegetables you have on hand.
They don’t take many minutes to make; you just need to draw out the water from the zucchini using salt, but after that, it’s simply a matter of forming and frying the fritters.
You can eat them warm right away or save them and eat them cold, for example in a sandwich.

Zucchini patties with cottage cheese and parmesan

Ingredients
- 1 pcs. Squash about 300g, coarsely grated
- 6 gram Coarse salt
- 1 pcs. Onion finely chopped
- 2 cloves Garlic finely chopped
- 100 gram Cottage Cheese
- 10 gram Parmesan grated
- 1 pcs. Egg
- 35 gram Oatmeal
- 8 gram Flour
- Salt and Pepper a little
Instructions
- Grate the zucchini and place in a bowl with the coarse salt - stir together and let sit for 10 minutes.
- This is to draw out the water so the patties don't become too wet.
- While it sits, you can chop the onion and garlic.
- After 10 minutes, squeeze out as much water as possible from the zucchini and put it in a bowl with the rest of the ingredients.
- Mix well and let the batter sit for about 15 minutes. In the meantime, make a salad or dip if desired.
- Form the batter into patties of the desired size and fry them until golden and crispy in a little butter or oil.
- Serve.
