Zucchini patties with cottage cheese and parmesan

Super delicious, vegetarian zucchini patties with parmesan and cottage cheese – easy to make, crispy on the outside, moist on the inside, and full of flavor from cheese, garlic, and spices – yum!

Ingredients

  • 1 pcs. Squash about 300g, coarsely grated
  • 6 gram Coarse salt
  • 1 pcs. Onion finely chopped
  • 2 cloves Garlic finely chopped
  • 100 gram Cottage Cheese
  • 10 gram Parmesan grated
  • 1 pcs. Egg
  • 35 gram Oatmeal
  • 8 gram Flour
  • Salt and Pepper a little

Instructions

  • Grate the zucchini and place in a bowl with the coarse salt - stir together and let sit for 10 minutes.
  • This is to draw out the water so the patties don't become too wet.
  • While it sits, you can chop the onion and garlic.
  • After 10 minutes, squeeze out as much water as possible from the zucchini and put it in a bowl with the rest of the ingredients.
  • Mix well and let the batter sit for about 15 minutes. In the meantime, make a salad or dip if desired.
  • Form the batter into patties of the desired size and fry them until golden and crispy in a little butter or oil.
  • Serve.
