Recipe for watermelon salad with feta, avocado, and edamame beans

Watermelon and feta taste super good together, the salad adds volume, and the beans provide plenty of good proteins. Feta and avocado ensure creamy deliciousness, and a bit of crunch on top in the form of pumpkin seeds.
The salad is super simple to make and works well as a side dish for most meals.

Ingredients
Watermelon salad with feta, avocado and edame beans
- 100 gram Fresh spinach
- 100 gram Arugula
- 180 gram Edamame Beans from frozen
- 0.25 pcs. Watermelon
- 2 pcs. Avocado
- 125 gram Feta
- Pumpkin Seeds 1 handful
Dressing
- 40.5 gram Olive Oil
- 22.5 gram Lime Juice
- 10.5 gram Honey liquid
Instructions
- Rinse and drain spinach and arugula.
- Put the beans in a bowl and pour boiling water over them, let them stand and thaw while you do the rest.
- Cut the watermelon and avocado into cubes and mix the dressing.
- Toss spinach and arugula with the dressing. Drain the beans and toss them in the bowl with the watermelon and avocado.
- Arrange on a platter or in a bowl and top with feta and seeds - serve.
