Recipe for thai chicken potato curry
Delicious Thai curry with potatoes, chicken, and rice.

Ingredients
- 300 gram Chicken Breast
- 150 gram Cooking Cream
- 1 can Coconut Milk the thick part
- 0.333333 pcs. Cucumber
- 1 pcs. Red Onion
- 1 pcs. Red bell pepper
- Green beans 1-2 handfuls
- Corn 1 small handful
- 5 pcs. Potato regular size
- Cilantro 1 small handful
- 4.6 gram Paprika
- 4.4 gram Turmeric
- 2.1 gram Cumin
- 18 gram Salt
- 2.6 gram Cinnamon
- 5.7 gram Fish Sauce
- 10 gram Curry Paste Yellow Curry paste
- Cashews 1-2 handfuls
- Jasmine Rice
- Oil for frying
Instructions
- First, boil the potatoes until they are 2/3 done.
- In a pan, fry the chopped onion in oil until it becomes soft.
- Then add the spices and curry paste and stir everything together.
- Then add a finely sliced bell pepper, as well as beans, coriander, and corn.
- Let everything fry until they become slightly soft.
- Next, add the chicken, frying for 1 minute on each side (until they are browned on the outside).
- Then add cooking cream and coconut milk. Let it simmer for about 7 minutes on medium heat, then add the potatoes and cashews, and simmer for an additional 7 minutes (covered).
- Finally, garnish with fresh cucumber and coriander.
