This stew is spicy, warming, and comfort-food-like – perfect for the end of winter and fall!

Filled with vegetables from the fridge, ground beef, and plenty of spices – it tastes wonderful! It’s healthy and doesn’t take many minutes to throw together…

Perfect as an easy weekday meal or for the weekend when it’s time to empty the fridge…
Eat it as it is, serve it with some good bread, or with rice if you’re very hungry.

Spicy Vegetable Stew with Beef

Ingredients

  • 300 gram Ground beef
  • Butter for frying
  • 2 pcs. Shallots finely chopped
  • 3 cloves Garlic finely chopped
  • 3 pcs. Carrots diced
  • 250 gram Sweet Potato peeled and diced
  • 1 can Chopped Tomatoes
  • 300 gram Water
  • 15 gram Apple Cider Vinegar or lemon juice
  • 1 pcs. Squash diced
  • 1/2 pcs. Broccoli heads into small florets

Spices

  • 7 gram Paprika
  • 4 gram Nutmeg
  • 1 gram Cilantro
  • 2 gram Cardamom
  • 2 gram Ground ginger
  • 1 gram Crushed chili
  • 6 gram Salt
  • Pepper a little

Instructions

  • Brown the beef in a bit of butter in a pot.
  • Add onions, garlic, and all the spices, let it simmer for a few minutes.
  • Add carrots, sweet potato, chopped tomatoes, water, and vinegar – let it simmer under a lid for about 10 minutes.
  • Then add broccoli and zucchini and let simmer for another 5 minutes.
  • Season to taste and serve, possibly with a bit of chopped parsley on top.
