Recipe for spicy corn patties with cottage cheese and carrots

Today, I saw these delicious corn fritters on Instagram.

So I thought I had to experiment with that.

Therefore, I’ve given them my own twist and created my version based on what I think is delicious.

I added cottage cheese and various spices that I love.

They turned out incredibly good!

It’s rare to hit the mark the first time you create a new recipe, but this time it was just spot on.

They are simply so good! Normally, my girlfriend is not keen on things that are too “healthy” and modern. She is from the countryside where you get sauce and potatoes. Fritters are made with pork and nothing else. But she loved them, I could hardly take pictures before she had eaten them.

So if, for example, you have a meat-free day a week or live a vegetarian lifestyle, these will fit perfectly into your routine.

Besides, they are healthy!

I added the cottage cheese to get more protein into the fritters.

I hope you will try them.

I’m sure you’ll like them even if you don’t eat vegetarian.

Spiced corn fritters with cottage cheese and carrots

Spicy corn patties with cottage cheese and carrots

Equipment

  • Bowl
  • Frying Pan
  • Oven

Ingredients

  • 2 pcs. Egg
  • 250 gram Cottage Cheese
  • 300 gram Corn from can
  • 200 gram Carrots grated
  • 2 cloves Garlic
  • 4.8 gram Turmeric
  • 2.1 gram Cumin
  • 4.6 gram Paprika
  • 1.5 gram Chili Powder about
  • 150 gram Flour
  • Salt and Pepper

Instructions

  • 1. Mix all ingredients together in a bowl and season with salt and pepper.
  • 2. Shape the patties with a spoon and place them on a pan with a bit of oil.
  • 3. Fry on medium/high heat until they have a good crust.
  • 4. Lower the heat and fry them until cooked through, or put them in the oven for about 10 minutes at 180°C fan.
