
Recipe for spaghetti puttanesca
If you just remove the meat from a dish, you get a slightly bland and characterless result. What is crucial is to add a lot of alternative umami flavor.
In my version, fresh date tomatoes, olives, capers, anchovies, and smoked paprika are used.
If you let the “meat sauce” simmer for ½ an hour, adjust the seasoning, and serve with freshly grated Parmesan on top, you won’t be able to taste that there is no meat in it.

Ingredients
- 1 pcs. Onion coarsely and finely chopped
- 2 cloves Garlic crushed
- 0.5 bunch Herbs fresh thyme or rosemary, rinsed and chopped
- Olive Oil good quality
- 3 pcs. Anchovy Fillets good quality anchovies in oil
- 100 gram olive pitted
- 9 gram Capers
- 15 gram Tomato Puree
- 1.15 gram Smoked paprika
- 1.45 gram Chili Powder dried
- 100 gram White Wine can be up to 2 dl
- 30 gram Tamari
- 1 can Tomato peeled
- 4.2 gram Sugar season to taste. It can be up to 2 tsp.
- 2 pcs. Zucchini
- 28 gram Bread day-old
- Parmesan freshly grated
- Pine Nuts roasted in rosemary, lemon, and garlic
- Coarse salt
- Pepper from grinder
Instructions
- Sauté onion, 1 clove garlic, and thyme in olive oil for a few minutes in a pan.
- Chop anchovies, olives, and capers, add to the pan, and let it simmer for a few more minutes.
- Add tomato paste, smoked paprika and chili, and mix well.
- Add white wine and tamari, and reduce slightly.
- Add the chopped peeled tomatoes and let it simmer on low heat for about 20 minutes.
- Season with sugar, salt, and pepper.
- Meanwhile, halve the zucchinis and scrape out the soft center with a teaspoon.
- Slice thinly with a mandoline or sharp knife.
- Toss slices of day-old bread with olive oil, garlic, and possibly some of the tomato sauce, and bake in the oven at 200 degrees Celsius (392 degrees Fahrenheit) until crispy.
- Boil the shredded zucchinis in salted water briefly, 2-3 minutes, until slightly tender.
- Drain the zucchinis and toss with a bit of extra virgin olive oil.
- Serve the zucchini strips with the tomato sauce and freshly grated parmesan on top.
- Sprinkle lemon-pine nuts on top.
