Recipe for homemade roasted almonds
Then it was time to make caramelized almonds. I made a few different versions, but both were based on the same basic recipe: 100 grams of almonds, 100 grams of powdered sugar, 1 dl of water, and 1 teaspoon of flavoring.

Ingredients
- 100 gram Almonds
- 100 gram Powdered Sugar
- 100 gram Orange Juice
- 1.3 gram Cinnamon
- 2.5 gram Vanilla Sugar
Instructions
- Put all the ingredients in a sauté pan.
- Turn on medium heat.
- Let it melt under constant stirring.
- The sugar melts slowly and begins to crystallize.
- When the sugar is dry, turn up to high heat.
- Now the dry sugar starts to melt and gives the almonds a glossy appearance.
- Just before the almonds start to turn too dark, take them off.
- Place them on baking paper.
- Let them cool down.
- Break them apart.
- Store in a dry, airtight container.
- Unfortunately, they didn’t get as much orange flavor as I had hoped.
Notes
I tried once more where I used water instead of orange juice and 1 tsp Africa mix from Puks Delicacies instead of cinnamon and vanilla sugar.
It gave fine nuances of cinnamon and cocoa plus a nice afterheat of chili. They turned out super good.
