Recipe for rhubarb upside down cake
The idea of upside-down cakes comes from the classic French apple tart, Tarte Tatin, from the 1880s.
Upside-down cakes are not for beginners, but they are truly delicious once you have a reasonable grasp on them.
The tricky part about this type of cake is that you don’t really know if the cake has succeeded until it’s “too late.” It’s only when you take it out of the oven and turn it out of the mold that you see whether it has been overcooked or undercooked.
Don’t be discouraged by this, because it is indeed a really delicious cake. Perfect for coffee gatherings.
