This version uses ramson pesto and grated cheese – an absolutely delicious little snack that can be used as a midday meal, for the packed lunch, taken on the go, or maybe used as a side dish.

Recipe for ramson twists

Have you ever tried making snurrer…? Soft and airy dough filled with delightful ingredients inside. In fact, you can put exactly the filling you like; different pestos, pizza toppings, or something entirely different. In this version, I used wild garlic pesto and shredded cheese – an absolutely delicious little snack that can be used as a mid-meal snack, packed lunch, taken on the go, or maybe used as a side dish.

The dough is both easy to make and delightful to work with. You can find the pesto recipe right here. If you don’t want to make your own pesto, you can just buy a ready-made one – it works just as well!

This portion yields about 18 wonderful snurrer. If you want, you can divide the dough in two and fill one half with something else. For example, it could be a red pesto or pizza sauce with some shredded cheese and ham. The possibilities are endless, and it’s always fun with variations and being creative with the fillings.

Equipment

  • Pot
  • Whisk
  • Bowl
  • Stand Mixer (Option 1)
  • Hand Mixer (Option 2)
  • Oven
  • Knife
  • Rolling Pin
  • Brush
  • Baking Tray

Ingredients

Dough

  • 100 gram Milk
  • 75 gram Butter
  • 25 gram Yeast
  • 12.5 gram Sugar
  • 3 gram Salt
  • 100 gram Ymer - Danish Soured Milk Product skyr or similar
  • 1 pcs. Egg
  • 250 gram Wheat Flour
  • 50-100 gram Rye Flour
  • 1 pcs. Egg whisked

Fill

  • 100 gram Pesto ramsons
  • 2 handfuls grated cheese

Instructions

  • Melt the butter over low heat in a small pot.
  • Remove the pot from the heat and add milk. Let the mixture cool to lukewarm (you should be able to dip your pinky finger in without burning) and dissolve the yeast in it.
  • Whisk sugar, salt, sour milk, and egg in the bowl.
  • Add the wheat flour and knead with a mixer or hand mixer with dough hooks.
  • Add the rye flour little by little until a suitable consistency is achieved. Finish kneading on a floured surface if necessary. The dough should be firm and soft but not too sticky.
  • Let the dough rise for 1 hour at room temperature.
  • Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit).
  • Divide the dough into two and roll each piece out into a rectangle (about 5 mm thick).
  • Spread the pesto on the two pieces of dough and sprinkle grated cheese over.
  • Fold each piece of dough in half and cut into strips about 2 cm thick. Twist each strip, roll it into a twist, and tuck the free end under the bottom.
  • Place the twists on a baking sheet, brush with egg, and bake for 18-20 minutes until they are nice and golden.
