Recipe for pommes pailles

Grab the mandoline and get ready to serve the most delicious ultra-crispy Pommes Pailles! Here you might be thinking, “Pommes… a what?” The name Pommes Pailles, pronounced [pom:pai], is (of course) French and means “potato straw,” which perfectly describes what Pommes Pailles are: Small, thin, and very delicate “mini-french fries.”

Pommes Pailles can be served in several ways, for example, both as a side to a good, juicy steak or to top a fine tartare. However, they are also excellent – almost addictive – snacks and make a sublime companion to an ice-cold beer on the terrace.

Because Pommes Pailles are super crispy from the outside in, they can – like potato chips – be enjoyed at any temperature; in stark contrast to its big brother, the regular French fry, which should be soft inside and crispy outside and therefore cannot have been laying for too long before it becomes a somewhat bland and sad culinary experience.

Pommes Pailles

Ingredients

  • 4 Baked Potato
  • 1 l Oil neutral in taste

Instructions

    1. Find your mandoline slicer.
    2. Mount the blade with the smallest "teeth".
    3. Slice the potatoes on the mandoline slicer - be careful with your fingers.
    4. Fill a bowl with water.
    5. Put the mini fries in the bowl of water.
    6. Let them sit in the water for 30-60 minutes. This is done to extract the starch from the potatoes, which helps to make them crispy. Feel free to replace the water with fresh tap water a couple of times during the process.
    7. Lay a kitchen towel on the table.
    8. Place the mini fries on one half of the kitchen towel.
    9. Fold the rest of the towel over the fries and pat/dry them well. If you have time, you can advantageously put them in the freezer for 30-60 minutes - it helps to dry them out.
    10. Pour oil into the fryer.
    11. Set the fryer to 185 degrees Celsius (365 degrees Fahrenheit).
    12. Deep-fry the fries at 185 degrees Celsius (365 degrees Fahrenheit) until they are crispy. It takes a few minutes, and it's important not to put too many in the oil at once, as it lowers the temperature. I made mine in three batches.
