
Recipe for lemon waffles with airy lemon cream
My oh my, these waffles taste absolutely faaaantastic….! At once crispy and soft with a mild flavor of citrus and vanilla and little poppy seeds inside.
I served them with a quick fluffy lemon cream that added just the right creamy and delicious indulgence to the waffles and also tasted really good. Yes, the boys definitely emptied the plate and asked when we could have them again.
Both the batter for the waffles and the lemon cream are easy and quick to mix together – and then it just requires a little patience while waiting for the waffles to bake. But you can always taste test a little along the way.
I add fat directly to the waffle batter, so I don’t have to deal with it on the waffle iron between each waffle. If the coating on your machine is okay, it should work just fine. Alternatively, you can just add a little butter before baking the waffles.
The batter is used here for waffles, but it can also be used to make small fluffy pancakes if you prefer that instead.
In any case, it’s a really delicious start to the day, a wonderful snack, a good dessert, or or or.. yes, the possibilities are many. Use them as you wish and enjoy!

Ingredients
Lemon waffles with bircher
- 250 gram Flour
- 85 gram Sugar
- 45 gram Birches blue
- 5 gram Baking Soda
- 2 gram Cardamom
- 4 gram Vanilla Sugar
- 23 gram Lemon Juice
- 300 gram Milk
- 2 pcs. Egg
- 25 gram Melted butter or melted butter
Citroncreme
- 100 gram Whipping Cream
- 50 gram Plain yogurt or plain yogurt/Greek yogurt/ymer
- 21 gram Honey
- 2 gram Vanilla Sugar
- 1 pcs. Lemon organic zest and juice thereof (alternatively 1-2 tbsp lemon juice)
Instructions
Lemon waffles with poppy seeds
- Put all ingredients in a bowl and whisk them well with a hand mixer until you get a smooth and even batter.
- Heat a waffle iron and cook your waffles.
Lemon cream
- Whip the cream until it forms peaks.
- Fold the skyr, honey, vanilla sugar, and lemon zest into the whipped cream.
- Gradually add the lemon juice and fold it in. Taste it along the way to ensure it’s exactly as you like it.
- Serve your waffles with lemon cream and possibly some berries.
