Lemon waffles with airy lemon cream

My oh my, these waffles taste simply faaantastic…! Both crispy and soft with a mild taste of citrus and vanilla and tiny poppy seeds inside.

Ingredients

Lemon waffles with bircher

  • 250 gram Flour
  • 85 gram Sugar
  • 45 gram Birches blue
  • 5 gram Baking Soda
  • 2 gram Cardamom
  • 4 gram Vanilla Sugar
  • 23 gram Lemon Juice
  • 300 gram Milk
  • 2 pcs. Egg
  • 25 gram Melted butter or melted butter

Citroncreme

  • 100 gram Whipping Cream
  • 50 gram Plain yogurt or plain yogurt/Greek yogurt/ymer
  • 21 gram Honey
  • 2 gram Vanilla Sugar
  • 1 pcs. Lemon organic zest and juice thereof (alternatively 1-2 tbsp lemon juice)

Instructions

Lemon waffles with poppy seeds

  • Put all ingredients in a bowl and whisk them well with a hand mixer until you get a smooth and even batter.
  • Heat a waffle iron and cook your waffles.

Lemon cream

  • Whip the cream until it forms peaks.
  • Fold the skyr, honey, vanilla sugar, and lemon zest into the whipped cream.
  • Gradually add the lemon juice and fold it in. Taste it along the way to ensure it’s exactly as you like it.
  • Serve your waffles with lemon cream and possibly some berries.
