
Recipe for kale salad with apples and grapes

The salad consists of just 5 ingredients and a good vinaigrette – something I almost always have on hand, as it quickly jazzes up any salad and turns it into something delicious. I also always have salted almonds on hand, as they make a wonderful topping for all sorts of dishes.
You’ll find the recipe for the vinaigrette below, and the salted almonds can be found right here if you want to make them yourself. They can also be bought ready-made in most grocery stores. The vinaigrette and almonds are essentially what make the salad, so if you make them, make a couple of good large portions, so you can quickly have a good salad ready another time.
This salad has a fine balance, where grapes provide sweetness, apples provide acidity, and the almonds add salt. The vinaigrette adds a bit of sharpness and flavor, but without being too much. A rather delightful mix that can be used for most things.

Kale Salad with Apples and Grapes
Equipment
- Cutting Board
- Knife
- Bowl
Ingredients
- 50 gram Kale rinsed and chopped
- 75 gram Pointed Cabbage finely sliced
- 2 pcs. Apples
- 150 gram Grapes green
Vinaigrette
- 54 gram Olive Oil
- 15 gram Apple Cider Vinegar or lemon juice, to taste
- 10.5 gram Honey liquid
- 5 gram Dijon Mustard
- Salt and Pepper freshly ground
Topping
- Almonds salted and chopped
Instructions
- Add chopped kale and sliced cabbage to a bowl. Dice the apples and halve the grapes – add both to the bowl.
- Mix the vinaigrette together and toss about 1 tablespoon into the bowl. Save the rest in a small jar with a lid for next time.
- Arrange the salad on a platter and top with chopped, salty almonds.
