
Recipe for honey and sriracha glazed oyster mushrooms with ‘ranch’ inspired dressing and apple salad

Honey and Sriracha Glazed Oyster Mushrooms with 'Ranch' Inspired Dressing and Apple Salad

- 200 gram Oyster Mushrooms
- 4 gram Smoked paprika
- 25 gram Honey
- 20 gram Chilli Sauce Sriracha
- 1 pcs. Apple
- 75 gram Sour Cream
- 25 gram Mayonnaise
- 1 clove Garlic
- 30 gram Fresh spinach
- 500 gram Potato
- 20 gram Walnuts
- 1 bunch Chives
- 4 gram Ay Cajun-ba Cajun Spice Mix

- 28.4 gram Butter
- 1.5 gram Salt
- 15 gram Ketchup
Step 4
- 6.8 gram Olive Oil
- 15.6 gram Wheat Flour
- 3 gram Salt
Step 5
- 13.6 gram Olive Oil
- 1.5 gram Salt
Instructions
Step 1
- Prepare Fries: Preheat the oven to 240°C/220°C (fan).
- Cut potatoes into 1 cm fries.
- Spread on a baking sheet with baking paper, drizzle with olive oil, season with Ay Cajun-ba and salt, and toss.
- Bake for 25-35 minutes, or until tender.
Step 2
- Make Dressing: Press or finely chop garlic.
- Chop chives.
- Mix chives, fraiche, garlic, mayonnaise, and a pinch of salt and pepper in a small bowl.
- Set aside.
Step 3
- Prepare Glaze: Melt butter over medium heat.
- Add honey, salt, sriracha, and ketchup, and cook for 2-3 minutes, or until thickened.
- Keep warm until serving.
Step 4
- Prepare Salad: Rinse spinach.
- Slice apple thinly. Combine apple, walnuts, spinach, olive oil, and salt in a large bowl.
- Tear mushrooms into strips, mix with smoked paprika, flour, and salt.
Step 5
- Fry Oyster Mushrooms: Add olive oil to a frying pan, and heat over medium-high heat.
- Fry mushrooms in batches for 4-5 minutes, or until crispy and golden.
- Transfer to a plate, season with salt.
- Toss mushrooms in honey and sriracha glaze just before serving.
Step 6
- Plating: Arrange oyster mushrooms, apple salad, and fries on plates.
- Serve with dressing.
