
Recipe for homemade tortillas with tomato salad, ham, and feta
Today, I just wanted something simple, delicious, and ideally quick… I was in the mood for something a bit spring/summer-like, that brings joy to both the stomach and the eyes.
This resulted in these homemade tortillas with a simple tomato salad, a quick-mixed crème fraiche dressing, ham, and lettuce – simple and good…
It’s actually both easy and quick to make your own tortillas.. They are a bit thicker than the store-bought ones – which I quite like, and it’s always fun to make your own.. But if you don’t have the time, the filling works just as well in a purchased tortilla. I seasoned my tortillas with a bit of salt, pepper, and thyme, but if you prefer them more neutral, just skip the spices – or add others if you like.
The mix of fillings I used works great, but feel free to use whatever you like.

Homemade tortillas with tomato salad, ham, and feta

Ingredients
Tortillas
- 200 gram Wheat Flour
- 100 gram Cornmeal can be replaced with wheat flour
- 6 gram Salt
- 1.15 gram Pepper
- 1 gram Thyme dried
- 42 gram Oil
- 200 gram Water
Tomato Salad
- 10 pcs. Cherry Tomatoes
- 15 gram Lemon Juice
- 3 gram Salt freshly ground, and a bit of pepper
- 30 gram Feta crumbled
Creme Fraiche Dressing
- 200 gram Sour cream
- 7 gram Honey liquid
- 6 gram Sweet mustard
- Salt and Pepper a bit
- 5 gram Herbs chopped, fresh - e.g. parsley, mint, basil, etc.
Other filling
- 1 pcs. Iceberg salad or another type of lettuce
- Ham Strips
Instructions
- Mix all the ingredients for the tortillas together in a bowl, knead well until smooth and soft dough. Let it rest for 15 minutes.
- Meanwhile, make the tomato salad: cut tomatoes into cubes and mix with the other ingredients.
- All ingredients for the dressing are also mixed together and seasoned to taste.
- Now you can divide the dough into 6 pieces and roll each piece out into a thin circle. Make sure to use plenty of flour on the table so it doesn't stick too much.
- Fry each tortilla in a pan with a little bit of olive oil until they are golden on both sides.
- Fill your tortillas with lettuce, ham, tomato salad, and dressing
