Recipe for healthy, gluten-free broccoli rolls

I’m currently working a bit on gluten-free recipes, and it’s neither because I want to be sanctimonious nor because I’m allergic – in fact, I really like both gluten and pasta – and I still eat them. But occasionally, I crave a healthier alternative that also leaves me feeling less bloated.

I thought gluten-free would be difficult and not so delicious, but with a few basics in stock, you can go a long way, and there are so many exciting recipes out there!

Today, I tried making gluten-free broccoli buns. I gathered inspiration from various sources and came up with something I think turned out pretty well.

These buns are both soft and flavorful, and they taste absolutely wonderful with butter and cheese on top. They would definitely be delicious with other toppings, too – in fact, I think they are excellent as sandwich buns.

They might not really compare to regular wheat buns, but that’s okay, because they are good just as they are – and they are so healthy that you can eat them with a clear conscience and an extra thick slice of cheese.

Equipment

  • Oven
  • Mini Choppers (option 1)
  • Food Processor (option 2)
  • Bowl
  • Baking Tray
  • Baking Paper

Ingredients

  • 1 pcs. Broccoli heads including stem
  • 2 pcs. Egg
  • 4.8 gram Baking Soda
  • gram Remember the yellow one
  • 28 gram Coconut Fiber Flour or regular coconut flour
  • 6 gram Salt
  • 55 gram Sunflower Seeds
  • 18 gram Sesame Seeds for topping

Instructions

  • Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit), regular oven.
  • Process the broccoli into “rice” in a mini chopper or food processor. Alternatively, it can be grated on a grater. Put it in a bowl along with the remaining ingredients and mix everything well.
  • Let the “dough” sit for 15 minutes. The dough won’t be like yeast dough – it’s more crumbly and moist, but once it has sat, you can form firm rolls with your hands.
  • Form 6 rolls and place them on a baking sheet lined with baking paper. Brush with water and sprinkle with sesame seeds.
  • Bake for about 20 minutes until they are nice and golden.
