Healthy, gluten-free broccoli rolls

These rolls are both soft and flavorful, and they taste especially wonderful with butter and cheese, and they would certainly be delicious with other toppings as well – in fact, I think they are excellent as sandwich rolls.

Equipment

  • Oven
  • Mini Choppers (option 1)
  • Food Processor (option 2)
  • Bowl
  • Baking Tray
  • Baking Paper

Ingredients

  • 1 pcs. Broccoli heads including stem
  • 2 pcs. Egg
  • 4.8 gram Baking Soda
  • gram Remember the yellow one
  • 28 gram Coconut Fiber Flour or regular coconut flour
  • 6 gram Salt
  • 55 gram Sunflower Seeds
  • 18 gram Sesame Seeds for topping

Instructions

  • Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit), regular oven.
  • Process the broccoli into “rice” in a mini chopper or food processor. Alternatively, it can be grated on a grater. Put it in a bowl along with the remaining ingredients and mix everything well.
  • Let the “dough” sit for 15 minutes. The dough won’t be like yeast dough – it’s more crumbly and moist, but once it has sat, you can form firm rolls with your hands.
  • Form 6 rolls and place them on a baking sheet lined with baking paper. Brush with water and sprinkle with sesame seeds.
  • Bake for about 20 minutes until they are nice and golden.
