Recipe for healthier, green patties

Here I have a recipe for healthier, green meatballs with warm pointed cabbage salad.

The meatballs have a little twist with kale and spinach, and the cabbage is quickly sautéed in a bit of oil and spices, so it requires less chewing effort, but you can still enjoy all the good nutrients from the cabbage.. ?

The meatballs are crispy on the outside and deliciously moist on the inside and full of flavor. They can be used in lunchboxes in the coming days or frozen, so feel free to make a good portion ?

Ingredients

Healthier, green puffs

  • 100 gram Kale Fresh or frozen
  • 100 gram Spinach Fresh or frozen
  • 200 gram Milk
  • 1 pcs. Stock Cube
  • 500 gram Minced pork
  • 9 gram Salt
  • 1 pcs. Onion Finely chopped
  • 1 pcs. Egg
  • 60 gram Oatmeal
  • 22.5 gram Graham Flour Or rye flour
  • Butter Or oil. For frying.

Warm scallion salad

  • 0.5 pcs. Pointed Cabbage
  • 0.5 bunch Broccoli
  • 40.5 gram Olive Oil
  • Salt
  • Pepper
  • Thyme Dried
  • Basil Dried
  • Sugar Snap Peas 1 handful

Instructions

Patties

  • Remove the kale leaves from the stalks and chop them finely.
  • Finely chop the spinach as well.
  • Give the kale and spinach a brief boil in lightly salted water.
  • Drain and let them drip dry thoroughly.
  • If using frozen kale and spinach, just let them thaw in a sieve. 
  • Heat the milk and dissolve the bouillon cube in it.
  • Let it cool slightly afterwards.
  • Meanwhile, mix the meat, salt, onion, egg, oats, and flour together well.
  • Press excess liquid from the kale and spinach and mix it into the meat mixture.
  • Let the meat mixture rest while you prepare the salad.
  • When the mixture is ready, form patties and fry them in butter or oil over medium heat until they are fully cooked.

  • Thinly slice the cabbage and cut the broccoli into smaller florets.
  • Sauté them on a pan over low heat with oil and spices for 5-6 minutes.
  • Remove from heat, arrange on a plate or in a bowl, and top with sugar peas.
