Recipe for hash with fried eggs
Hash is as simple as it is delicious.
It’s a brilliant way to use up leftover meat and cooked potatoes. Just add a chopped onion and serve the dish with a fried egg on top, and you have a complete meal that’s sure to delight.
For this hash, we used leftovers from a pork roast we had cooked a couple of days before. In addition to the fried egg, we also used some of our homemade dry-cured bacon as a topping, which really was the finishing touch.
Ketchup is also a must when it comes to hash, and in our opinion, Heinz tomato ketchup is the best choice for dishes with bacon, as the balance between the tangy and sweet perfectly complements the salty bacon flavor.

Ingredients
- 1 pcs. Onion
- 200 gram Pork Roast a leftover (can also be other types of meat).
- 500 gram Potato boiled, preferably from the day before
- 100 cloves Bacon dry-cured, in slices
- 2 pcs. Egg
- Butter for frying
- Spices salt and pepper
Instructions
- Fry bacon in a pan until golden and crispy.
- Remove it from the pan - save the fat - and place the bacon on a paper towel.
- Cut meat, potatoes, and onions into cubes.
- Fry them in the bacon fat until golden and suitably cooked. Add a good dollop of butter along the way if there isn't enough bacon fat.
- Fry the fried eggs in plenty of butter in another pan. Fry at low heat over a long period, and only on one side. This way, you avoid the egg becoming dry and hard, but it is still cooked enough that it isn't raw.
- Serve the hash with bacon and fried eggs on top, along with ketchup and pickled beets as a side.
