Recipe for goat cheese foam

Do you love goat cheese? Or are you a bit hesitant about its distinctive flavor?

With goat cheese foam, the taste becomes slightly milder, making it the perfect complementary accompaniment in various dishes.

Goat cheese has been produced for thousands of years, and it’s likely one of the first dairy products in the world. Goat cheese and goat milk are particularly popular in regions with limited access to refrigeration, and for preservation, a relatively large amount of salt is added.

Goat cheese has a very distinctive and tangy flavor that many either love or hate. We Danes have grown up with the mild, rounded taste of cow’s milk, and the significantly more tangy and sharp goat cheese is therefore not for everyone.

However, you can create fantastic contrasting taste experiences by always remembering to combine and balance the sour, sweet, salty, and bitter elements in the kitchen, and the tangy, salty, and slightly sharp taste of goat cheese makes it particularly suitable for complementing the sweetness in, for example, fruit.

July, August, and September are fig season, and that can be advantageously utilized. Goat cheese and figs pair incredibly well together. This is a very simple but incredibly delicious combination – and it’s an easy way to impress guests.

Goat Cheese Foam

Ingredients

  • 250 gram Goat Cheese with herbs
  • 125 gram Cream soured
  • 125 gram Cream minimum 36%
  • 40 gram Olive Oil
  • 1 gram Sugar
  • Salt to taste
  • Pepper to taste

Instructions

Goat Cheese Foam

  • Find your blender.
  • Put goat cheese, oil, the soured cream in the blender.
  • Add sugar and a little salt and pepper.
  • Blend everything into a smooth, even puree.
  • You can optionally strain the puree if you find it necessary.
  • Pour the cream into a bowl.
  • Add the puree to the cream.
  • Stir it together into a firm consistency. Find a 1/2-liter siphon bottle and one nitrous oxide gas cartridge. Attach the gas to the bottle. Pour the mixture into the siphon bottle. Shake the bottle vigorously throughout. Place the bottle in the refrigerator. Let it chill for 1 to 2 hours before using it.

Serving Suggestions

  • Optionally serve your delicious goat cheese foam with figs that are lightly baked in the oven with a bit of honey drizzled over.
  • Serve the goat cheese foam and the warm figs on slices of toasted whole grain or nut bread.
