Homemade French fries are a divine dish.

Generally, when making something that takes as long as this, make enormous portions.

It usually takes only 5-10% longer work time even if you quintuple the portion size.

These are triple cooked. It is a method developed by the English chef, Heston Blumenthal, back in 1993. It ensures an ultra-crispy exterior and a perfectly soft interior.

Ingredients

  • 20 pcs. Potato Baking Potatoes
  • 3 l Oil Grapeseed, sunflower, canola, or deep-frying oil (flavor-neutral)

Instructions

  • Start by cutting the fries into appropriate sizes. We typically use a mandolin slicer, but a knife works just fine. Some people prefer thin fries, while others like them large and thick. You don't need to peel the potatoes; we think they look more authentic with the skin on, but that's up to you.
  • It's important to remove the starch from the potatoes, as it helps ensure they get crispy. Once the potatoes are peeled, place them in water, changing the water every half hour until it no longer becomes cloudy from the starch. This typically takes an hour or two.
  • Then boil the potatoes for 10 minutes, pat them dry, and place them in the freezer for a few hours.
  • Next, take them out and fry them at 140 degrees Celsius (284 degrees Fahrenheit) for 7 minutes, pat them dry, and place them back in the freezer for a few hours. You can use a deep fryer or fry them in oil in a pot.
  • Take them out again and fry them at 160 degrees Celsius (320 degrees Fahrenheit) for 7 minutes, pat them dry, and place them back in the freezer.
  • Finally, repeat the process and cook them at 190 degrees Celsius (374 degrees Fahrenheit) for 3-5 minutes until they reach your desired color.
  • Since your pot or deep fryer may have size limitations, there's no need to cook them all at once. Divide the batch a bit, as too many fries in the pot can also lower the oil temperature too much. The already cooked fries can be placed on a baking sheet in the oven at 200 degrees Celsius (392 degrees Fahrenheit) while you cook the rest.
  • In general, you can take the double cooked fries out of the freezer and put them directly in the pot for a regular weekday meal. Therefore, it's a good idea to make very large batches.
  • Serve the dish with a good steak (e.g., hanger steak or Beef Wellington) and a homemade béarnaise.

Notes

A good tip is to make this dish during the winter season when it's cold outside.
The outdoor temperature helps cool down the fries instead of having the hot fries cause frost in your freezer.
