Empty the Fridge Pie

We love pie at our house and try to minimize our food waste as much as possible. That's why, in a busy everyday life, we often end up with what I like to call "Empty the Fridge Pie".

We love pie at home and really try to minimize our food waste as much as possible. Therefore, we often have what I usually call “Clean Out the Fridge Pie” on a busy weekday.

Basically, there are almost no limits to the direction you can take, as long as you have a good pie crust and maybe add some fried bacon.

In this pie, I have leftover chicken and rice topped with leek and pointed cabbage – and of course, two ingredients I almost always have on hand: Onions and bacon.

Empty the Fridge Pie

Ingredients

Pie Crust

  • 175 gram Wheat Flour
  • 6 gram Salt
  • 100 gram Water
  • 46 gram Oil

Fill

  • Bacon diced
  • Chicken a little leftover
  • Rice
  • Pointed Cabbage finely chopped
  • 0.5 pcs. Leek
  • 1 pcs. Onion
  • 5 pcs. Egg
  • 97 gram Whipping Cream
  • Grated cheese your preferred one
  • Salt and Pepper from the grinder

Instructions

Pie Crust

  • Put all the ingredients in a bowl and mix them together.
  • Roll out the dough to a size that fits your pie dish. My dish is about Ø 24 centimeters.
  • Place the dough in the greased pie dish and press it well into the sides.
  • Set the pie crust aside and proceed to the pie filling.

Filling

  • Fry the bacon cubes.
  • Peel and chop the onion and finely slice the leek.
  • Toss rice, cabbage, fried bacon cubes and sautéed onion and leek together in a bowl. Add eggs and cream and whisk everything together with salt and pepper. Pour the filling over the pie dough in the dish.
  • Bake the pie in the middle of the oven for 25 - 30 minutes at 170 degrees Celsius (338 degrees Fahrenheit) fan oven.
  • Let the pie cool a bit and serve
