We love pie at our house and try to minimize our food waste as much as possible. That's why, in a busy everyday life, we often end up with what I like to call "Empty the Fridge Pie".
Put all the ingredients in a bowl and mix them together.
Roll out the dough to a size that fits your pie dish. My dish is about Ø 24 centimeters.
Place the dough in the greased pie dish and press it well into the sides.
Set the pie crust aside and proceed to the pie filling.
Filling
Fry the bacon cubes.
Peel and chop the onion and finely slice the leek.
Toss rice, cabbage, fried bacon cubes and sautéed onion and leek together in a bowl. Add eggs and cream and whisk everything together with salt and pepper. Pour the filling over the pie dough in the dish.
Bake the pie in the middle of the oven for 25 - 30 minutes at 170 degrees Celsius (338 degrees Fahrenheit) fan oven.
