Recipe for egg pancake with salmon

Ingredients
- 2 Egg
- Salt
- Pepper
- Cayenne Pepper
- Onion Powder
- Garlic Powder
- 0.5 Avocado
- Baby Spinach
- 50 gram Cold-smoked salmon
- Oil For frying
Instructions
- Crack the eggs into a bowl and whisk together eggs, salt, pepper, cayenne pepper, onion powder, and garlic powder until smooth.
- The amount and type of spices are a matter of taste. So just experiment with different variations.
- Heat a medium-sized frying pan over medium heat and add a tablespoon of oil to the pan.
- Pour the egg mixture into the pan and cook it into a thick pancake over medium heat. Occasionally lift the edge of the pancake to allow any uncooked egg to flow underneath and cook.
- When the top of the pancake starts to set, flip the pancake and cook on the other side.
- Meanwhile, rinse a handful of spinach and slice half an avocado.
- Cut the salmon into strips.
- Once the pancake is cooked, place it on a plate and add the spinach, avocado, and salmon. You can now fold the pancake.
