Egg Pancake with Salmon

Ingredients

  • 2 Egg
  • Salt
  • Pepper
  • Cayenne Pepper
  • Onion Powder
  • Garlic Powder
  • 0.5 Avocado
  • Baby Spinach
  • 50 gram Cold-smoked salmon
  • Oil For frying

Instructions

  • Crack the eggs into a bowl and whisk together eggs, salt, pepper, cayenne pepper, onion powder, and garlic powder until smooth. 
  • The amount and type of spices are a matter of taste. So just experiment with different variations.
  • Heat a medium-sized frying pan over medium heat and add a tablespoon of oil to the pan.
  • Pour the egg mixture into the pan and cook it into a thick pancake over medium heat. Occasionally lift the edge of the pancake to allow any uncooked egg to flow underneath and cook.
  • When the top of the pancake starts to set, flip the pancake and cook on the other side.
  • Meanwhile, rinse a handful of spinach and slice half an avocado.
  • Cut the salmon into strips.
  • Once the pancake is cooked, place it on a plate and add the spinach, avocado, and salmon. You can now fold the pancake.
